Raw Cacao for Valentine’s Day
Very few people have ever had the raw food that all chocolate comes from - cacao beans! These are seeds of the cacao fruit which grows on a jungle tree. Botanically, cacao is actually a nut but for simplicity we usually use the term "cacao beans."
Montezuma, the emperor of the great city of Tenochtitlan (now Mexico City) of the Aztec empire had his treasure vaults filled with cacao beans, not gold! The Aztecs used cacao beans as currency.
Chocolate is one of America's most well loved foods. The raw beans are high in flavonoids, polyphenols, magnesium and more. Unfortunately, most cacao beans are processed to make chocolate using methods that destroy 1/4 to 1/2 of chocolate's naturally occurring antioxidants. Also most chocolate has added white sugar, the unhealthy fats and artificial ingredients.
Organic cacao is cultivated under a shade canopy in the rain forest that preserves critical elements of the native tropical forests. Biologists have determined that this environmentally sound farming method helps to maintain bio-diversity and protects the winter habitat of millions of migratory songbirds. Conversely, conventional cacao is second only to conventional cotton in its use of pesticides, according to the Pesticide Action Network.
